30th 52! Potato Doughnuts!

Yes, you read that correctly. Potato Doughnuts. They are actually pretty good too! This recipe is a little strange though. One of the ingredients is mashed potatoes. The potatoes make the dough fluffy and yummy. Hey, whatever works, right? Just don't add the flour too quickly... It'll puff up in your face- not that this happened to me...

Ingredients:
  • 4 small potatoes, peeled and quartered
  • 1 cup plus ¼ cup milk, warmed
  • 2 large eggs, lightly beaten
  • ¾ cup butter
  • ¾ cup sugar
  • 1 package (or 2 ¼ tsp.) active dry yeast
  • 4 ½ cups bread flour
  • 1 tsp salt
  • Extra light olive oil for frying
  • 1 Tbsp. butter, melted
  • Additional sugar
Directions:
Boil potatoes and allow to cool before mashing.
In a stand mixer with the hook attachment, mix milk, eggs, sugar and yeast on low for 2 minutes allowing the yeast to activate.
Add the mashed potatoes, then lard, then flour one cup at a time, until it is all added. Then add the salt and mix until dough is soft and supple.
Knead and add additional ¼ to ½ cup flour if necessary: the dough should be really soft, but NOT sticky.
Roll out dough to ½-inch thickness with a rolling pin.
Cut out doughnuts with the rim of a cup
Place on greased baking sheets; cover with a damp, lightweight towel and let rise until almost doubled in size, about 30 minutes.
Cook in oil heated to 340 degrees F, till browned on both sides, flipping them over a few times to get even color.
Remove from oil and place onto paper towels to dry.
If desired, brush warm doughnuts with melted butter and dip in powdered sugar.

29th 52 French Silk Chocolate Pie!

Quick announcement before I talk food- I think I am going to start posting every two weeks. So I will still be doing a 52 each week but I will post two posts every two weeks. I still might post one each week occasionally but it's easier for me to do two at once. Anyway back to foodland!

So rich and yummy and chocolatey and delicious. So many calories, so worth it. This pie is no-bake and while some versions use raw eggs I used egg-beaters so it was completely safe to eat. This fluffs up really nicely and before it sets in the fridge it tastes like chocolate mousse! Add some cool-whip and you have a delicious dessert! Here's the recipe...

Ingredients:
  • 1 Ready made chocolate pie crust
  • 3 (1 ounce) squares unsweetened chocolate, cut into pieces
  • 1 cup butter, softened (do not use margarine)
  • 1 cup sugar
  • 1/2 teaspoon vanilla
  • 4 pasteurized eggs or equivalent fat-free cholesterol-free egg product
  • Chocolate shavings to but on top
  • Cool-whip to serve with pie
Directions:
  1. In 1-quart saucepan, melt chocolate over low heat; cool. In small bowl with electric mixer, beat butter on medium speed until fluffy. Gradually beat in sugar until light and fluffy. Beat in cooled chocolate and vanilla until well blended.
  2. Add eggs 1 at a time, beating on high speed 2 minutes after each addition; beat until mixture is smooth and fluffy. Pour into pie shell. Refrigerate at least 2 hours before serving.

28th 52, Chocolate chip cookies!

Easiest cookies ever. I had these in the oven 10 minutes tops. it's because these are made from a cake batter. They taste awesome though, you can barley tell they were made from a cake batter. I brought these with us on our trip to South Carolina. They are really soft and very chocolatey. Just the way I like them!

Ingredients:
  • 1 package yellow cake mix
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups semisweet chocolate chips (12oz)
Directions:
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Pour the cake mix into a large bowl. Stir in the butter, eggs and vanilla with an electric mixer until well blended. Stir in the chocolate chips. Drop by rounded spoonfuls onto cookie sheets.
  3. Bake for 11 to 15 minutes in the preheated oven, until the edges are golden. Cool on baking sheets for a few minutes before removing to cool on wire racks.

27th 52 Dessert Sushi!

I am very sorry! I haven't blogged in a while. I've been insanely busy. I had regionals for Science Olympiad, then I had softball tryouts for school and then I made the team and I've had so many practices, plus I just got home from South Carolina- I had been there since last Friday. Important thing is, I'm here now! So lets get to it. I made dessert sushi. It tastes a lot better than it sounds! I used rice krispy treats, fruit roll ups, cake and icing, coconut, mini marshmallows, and a good bit of food coloring. I tried making California rolls first, but as you can see from the picture, that didn't work out to well. The rice krispy treat didn't roll nicely so I ended up making octopus (which was apparently the wrong color, oops!), eel, and Swedish fish sushi. I'm just going to put the recipe for the Swedish fish ones but if you want the recipe for any of the other ones ask and I'll post it. So here's the recipe!

Ingredients: (For Swedish fish.)
  • Swedish fish
  • Rice krispy treats
  • sweetened coconut
  • Green or blue fruit roll up
  • White icing
Directions:
Roll out your rice krispy treats to about 3/4 inch thick and cut into squares. Cut a strip of fruit roll up and put a dab of icing on it and wrap it around the edge of the rice krispy treat. Ice the top lightly and dip in coconut. Put a little icing on the Swedish fish and put in the middle of the sushi piece. Enjoy!
